Cornerstone Garlic Farm is a small family farm that specializes in garlic. We started in 1996 with a small crop of elephant garlic and expanded each year. For the 2008 season we have eight varieties of garlic planted. We are one of a few farms in the Carolinas that offer seed garlic, braids and table stock garlic thru mail order and local sales. We practice sustainable agriculture and though we are not certified organic we use organic practices. We believe that we should be good stewards of the land that God gave us.
We plant our garlic& shallots in Oct and Nov. By early spring we are ready to pull small garlic for green garlic. In May we have garlic scapes available .We harvest our garlic from late May until early July and sell it fresh at the local market as well as cured for use all winter.
We started growing Shiitake Mushrooms in 2005. Besides garlic, shallots and mushrooms we grow a wide variety of fresh vegetables, blackberries and herbs. Our produce is available at local markets from March - December. Fresh homemade Garlic Powder is one of several value added products we take to local markets as well. We usually end our garlic season by selling at the Virginia Wine and Garlic Festival

Garlic and basil cream sauce with shrimp
1 lbs med shrimp Peeled
12 oz penne or other pasta
4 tbs. Butter (divided)
10 cloves ...1 lbs med shrimp Peeled
12 oz penne or other pasta
4 tbs. Butter (divided)
10 cloves of spicy hardneck garlic
1 cup heavy cream
10-12 basil leaves (minced)
1 med. shallot
pepper and salt
1 1/2 cups Freshly grated parmesan (divided)
Recipe
Cook pasta as directed on the box. In a small deep skillet sauté' the shrimp and 2 cloves of garlic (pressed) in 1 tbs of butter till done .Take shrimp out of the pan add the rest of the butter Add 6 more cloves of garlic (pressed) and shallots (minced) sauté' 3 min. over low heat. Pour in cream , basil , 1 cup cheese,2 cloves of garlic thinly sliced. salt and pepper. Simmer over low heat covered but vented 7-10 min. until thickened add the shrimp back in the pan mix with sauce and then pour over pasta and top with rest of cheese and a basil leaf .(more) | print recipe
